Ingredients

 
2 orange roughy or haddock fillets (4 ounces each) Paprika
 
1 small tomato, diced
 
1 green onion, sliced
 
2 tablespoons chopped green pepper
 
2 tablespoons chopped celery
 
2 tablespoons chopped parsley
 
1 tablespoon butter
 
1 tablespoon dry white wine
 
Juice of 1 lime
 
dash salt and pepper

Directions

Place fish fillets in 10 x 6-inch microproof baking dish.
Sprinkle with paprika.
Combine tomato, onion, green pepper, celery, and parsley.
Spoon vegetables over fillets.
Set aside.
Place butter in 1 -cup glass measure.
Cook on HI, 1/2 minute.
Add wine and lime juice to melted butter, and pour over vegetables and fish.
Sprinkle with salt and pepper.
Cover with waxed paper.
Cook on HI, 3 minutes.
Rotate dish and continue to cook on HI, 2 minutes.
