Ingredients

 Spinach leaves16
 4 teaspoons good quality red wine vinegar
 4 navel oranges, peeled and sliced into rounds
 4 teaspoons good quality olive oil
 3 or 4 very thin slices of red onion, separated into rings

Directions

Arrange spinach leaves on each of four plates.
Arrange orange slices on spinach and slip onion rings between orange slices.
Whisk vinegar and oil together and pour over salads.
