1 tablespoon cold water
2 cups milk (not canned)
1/3 cup honey
1 teaspoon grated orange rind
1/4 cup orange juice
1 teaspoon lemon juice
Directions
Dissolve a rennet tablet by crushing it in cold water.
Heat the milk, honey, and grated orange rind, slowly, stirring constantly.
Test a drop on the inside of the wrist frequently.
When comfortably warm, not hot, remove from the heat.
Add the dissolved rennet tablet and stir quickly for a few seconds only.
Pour at once into a refrigerator tray.
Do not move until firm, or for about 10 minutes, and then chill in the refrigerator for about 1/2 hour.
Then place in the freezing compartment and freeze until firm.
Remove from the tray to a bowl, break up with a fork, and beat with either an electric or rotary beater until it is free from lumps but still a thick mush.
Beat orange and lemon juice quickly into the mixture.
Return to the freezing compartment and finish freezing.
