Ingredients
2 1/2 pound broiler-fryer chicken, cut up
1/2 cup orange marmalade
1/4 cup orange juice
2 tablespoons cornstarch
2 tablespoons packed brown sugar
2 tablespoons lemon juice
1 1/2 teaspoons salt
1/2 orange, sliced and quartered
Directions
Arrange chicken pieces skin sides up and thickest parts to outside in oblong baking dish, 12 x 7 1/2 x 2 inches.
Cover loosely and microwave 15 minutes.
Mix marmalade, orange juice, cornstarch, brown sugar, lemon juice and salt in 4 cup glass measure.
Spoon in juices from chicken.
Microwave sauce 2 1/2 minutes; stir.
Microwave to boiling, 1 to 11/2 minutes.
Boil until sauce is thickened and translucent, 1 minute longer.
Stir in orange slices.
Spoon sauce over chicken.
Cover loosely and microwave until chicken is done, 10 to 15 minutes.
If desired, garnish with parsley.
