|Canned sliced peaches in juice||8 1⁄2 Ounce (1 Can)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Orange flavor sugar free gelatin||1⁄4 Ounce (1 Package, 4 Serving Size Jell O Brand)|
|Ice cubes||4 (Adjust Quantity As Needed)|
|Low fat cottage cheese||1⁄2 Cup (8 tbs)|
|Almond extract||1⁄4 Teaspoon|

Add water to juice to make 1/2 cup; set aside.
Dice peaches and place in individual dessert dishes.
Pour boiling water into blender.
Cover and blend at low speed until gelatin is completely dissolved, about 30 seconds.
Combine measured liquid and ice cubes to make 1 1/4 cups.
Add to gelatin and stir until ice is partially melted.
Then add cottage cheese and extract.
Blend at high speed for 30 seconds.
Pour over peaches in glasses.
Chill until set, about 30 minutes.
Garnish as desired.
