Orange Carrot Cake Recipe
Preparing this Orange Carrot Cake recipe is the second best way to please a crowd. Am sure you are aware of the first??? I just love Dessert recipes and this dish is my only favorite amongst them. I will look forward to your feedback.
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/8 teaspoon salt
2 eggs, lightly beaten
1/2 cup sugar
1/3 cup vegetable oil
1/3 cup frozen unsweetened orange juice concentrate, thawed and undiluted
1 cup grated carrots
Vegetable cooking spray
1 1/2 teaspoons sifted powdered sugar
Directions
Combine flour, baking powder, allspice, cinnamon, soda, and salt in a medium bowl; set mixture aside.
Combine eggs, 1/2 cup sugar, oil, and orange juice concentrate in a large bowl; beat well.
Add flour mixture and carrots, stirring well.
Spoon batter into an 8-inch square baking pan coated with cooking spray.
Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean.
Cool cake completely in pan.
Sprinkle with powdered sugar, and cut into squares to serve.
