Directions
1) In a bowl, using the electric mixer, cream the butter till soft
2) Add in 1 cup of sugar and continue to beat well
3) Tip in the orange rind and salt and continue to cream well
4) Add in the remaining sugar with the cream, juice and egg yolk beating well after each addition
5) Add in the cream to ensure a smooth spreading consistency is obtained
SERVING
6) Use the frosting to ice the top and sides of an 8 inch or 9 inch layered cake
