Ingredients

 
8 medium seedless oranges
 
6 tablespoons chopped onion
 
4 medium red onions
 
4 small cloves garlic, put through press
 
1 cup plus 2 tablespoons dry red wine
 
Freshly ground black pepper to taste
 
6 tablespoons good quality olive oil
 
8 dozen pitted black Italian,
 
3 tablespoons tarragon vinegar
 
French or Greek olives halved

Directions

Peel oranges and slice horizontally.
Slice onions very thinly and break into rings.
Whisk together wine, oil and vinegar and stir in onion and garlic.
Season with pepper.
Arrange orange slices and onion rings in glass serving bowl, layering with black olives.
Pour over dressing and when ready to serve, mix oranges and onions with dressing.
NOTE TO COOK: Either carry salad to party in serving bowl, tightly wrapped, or carry onions, oranges and olives in separate containers and dressing in a fourth container.
Arrange at party.
