Ingredients
Oranges- 4 small
Onion- 1 small, peeled 1/4 cup olive or salad oil
Red-Wine Vinegar- 2 tablespoons
Garlic- 1 clove, split
Salt- 1/4 teaspoon
Pepper- dash, freshly ground
Crisp Salad Greens- 1 quart
Green Olives- 1/2 cup, pitted and sliced (optional)
Directions
GETTING READY
1) Peel oranges and remove the white membrane.
2) Using a sharp knife, cut oranges and onion in thin slices.
3) In a shallow dish, place the onion and orange slices.
MAKING
4) In a small cup, place together olive oil with vinegar,
2 tablespoons water, garlic, salt, and pepper,
5) Stir the vinegar mixture well with fork.
6) Stream the vinegar mixture over oranges and onion.
7) Cover and refrigerate the onion mixture, until well chilled for at least 2 hours.
8) Remove the garlic from onion mixture and discard.
FINALIZING
9) In a salad bowl, place the greens and olives.
10) Mix in the oranges and onions, separated into rings, with the dressing, and toss well.
SERVING
11) Pile the onion mixture in the serving plate and serve.
