Orange Zest Carrots Recipe

 Tender young carrots8
 Green onions and tops4 (With 2 Inches Of Tops)
 Butter/Margarine3 Tablespoon
 Shredded orange peel1 Tablespoon
 Sugar1⁄2 Teaspoon
 Salt1⁄2 Teaspoon


Scrape carrots lightly and shred on coarse side of grater.
Chop onions and cook gently without browning in heavy saucepan in the melted butter.
When onions are soft, stir in carrots, orange peel, sugar and salt.
Stir until everything is shiny with butter.
Cover pan tightly and cook over very low heat until carrots are crisply tender, 5 to 8 minutes.
Shake pan frequently to keep carrots from sticking.
