Ingredients

 Unflavored gelatin3 Tablespoon
 Cold water1/4 Cup (16 tbs)
 Boiling water3/4 Cup (16 tbs)
 Sugar1/2 Cup (16 tbs)
 Orange juice1 3/4 Cup (16 tbs)
 Lemon juice1/3 Cup (16 tbs)
 1 cup Madeira wine
 Few drops red food coloring
 Whipped cream or evaporated milk or Boiled Custard Sauce

Directions

1. Soak the gelatin in the cold water 5 minutes; pour the boiling water over it, add the sugar and stir until dissolved. Place in the refrigerator to chill thoroughly.
2. Then stir in the orange and lemon juice and wine, add 1 or 2 drops of red coloring to make it a pleasing red color.
3. Pour the mixture into 1 large mold or 8 individual molds rinsed with cold water. Chill until firm.
4. When ready to serve invert the mold onto a serving plate and serve with whipped cream or Custard Sauce.
