5 cups packaged shredded cabbage with carrot (coleslaw mix)
1 small orange, peeled, sliced crosswise, and quartered
2 green onions, thinly sliced
3 tablespoons vinegar
3 tablespoons salad oil
2 tablespoons sugar
1 1/2 teaspoons finely shredded orange peel
2 tablespoons orange juice
1 teaspoon walnut oil (optional)
1/8 teaspoon salt
1/4 cup chopped walnuts, toasted
Directions
1 In a large bowl combine shredded cabbage mix, orange pieces, and onions. For dressing, in a screw-top jar combine vinegar, salad oil, sugar, orange peel, orange juice, walnut oil (if using), and salt. Cover and shake well. Pour dressing over cabbage mixture; toss gently to coat.
2 Cover and refrigerate for 2 to 4 hours or until chilled. Before serving, add chopped walnuts and toss again.
