Orange Tapioca Pudding Recipe

1/4 cup quick cooking tapioca

2 eggs, separated
2 teaspoons grated orange rind
1/4 cup orange juice
1 egg white
1/2 cup sugar

Directions
Combine milk, 2 tablespoons sugar, tapioca, salt, and egg yolks; beat at low speed of an electric mixer until blended.
Cook over medium heat 6 minutes or until mixture comes to a boil, stirring constantly.
Stir in rind and juice.
Cool slightly.
Combine 3 egg whites, 1/2 cup sugar, and cream of tartar in top of a double boiler.
Place over simmering water.
Cook, stirring constantly with a wire whisk, 4 minutes or until mixture reaches 160°.
Remove from heat.
Beat at high speed 7 minutes or until soft peaks form.
Fold egg white mixture into pudding mixture; spoon into dessert dishes.
Chill until set
