Ingredients

 
1 cup sifted whole wheat pastry flour
 
1 cup unbleached white flour
 
2 teaspoons baking powder
 
1 cup honey
 
1/2 cup butter
 
2 eggs, separated
 
1/4 cup orange juice
 
1 large orange, peeled, seeded, and chopped
 
Orange Frosting
 
1/2 orange, peeled, seeded, and sectioned

Directions

Preheat oven to 350°F.
Butter an 8 X 8 X 2-inch pan.
Sift together whole wheat pastry flour, unbleached white flour, and baking powder 3 times.
In a large bowl, beat together honey and butter until fluffy.
Beat in egg yolks and orange juice.
Add flour mixture, a little at a time, mixing well.
Fold in chopped oranges.
In a small bowl, beat egg whites until stiff peaks form.
Fold into batter.
Bake in prepared pan on middle shelf of oven for 35 to 45 minutes, or until a cake tester or food pick inserted into the center comes out clean.
Cool completely, and frost with Orange Frosting.
Decorate with orange sections.
