Orange Sponge Cake Recipe
Ingredients
2 cup sifted cake flour
2 tsp baking powder
1/4 tsp salt
5 eggyolks
1 2/3 cup granulated sugar
3/4 cup water
1 1/2 tsp grated orange rind
1/2 cup orange juice
4 egg whites
Directions
Sift cake flour, baking powder, and salt together four times.
Beat egg yolks and sugar replacement together until thick enough to hold a soft peak.
Add water gradually, beating very thoroughly.
Combine orange rind and orange juice.
Fold in sifted dry ingredients and orange juice alternately in small amounts to the egg yolk mixture.
Now beat the egg whites until very stiff peaks form.
Fold egg whites into batter.
Pour batter into a 10 in. (25 cm) ungreased tube pan.
Bake at 350°F (175°C) for 50 to 60 minutes or until done.
Invert and cool completely.
Remove from pan.
