Orange Spiced Rice Recipe
Ingredients
| 1 tablespoon acceptable margarine | ||
| Onion | 1 Large, minced | |
| Celery stalks | 2 , minced | |
| Brown rice | 2 Cup (16 tbs), uncooked | |
| Water | 3 Cup (16 tbs) | |
| 2 cups homemade Chicken Broth or commercial low-sodium variety | ||
| Golden Raisins | 2/3 Cup (16 tbs) | |
| Peel of 1 orange, chopped | ||
| Ground cloves | 1/8 Teaspoon | |
| 2 oranges, peeled and cut into small segments | ||
| Fresh mint sprig | ||
Directions
In a large saucepan over medium-high heat, melt margarine.
Add onion and celery and saute 3 minutes.
Add rice and saute 2 additional minutes.
Add water, broth, raisins and orange peel.
Bring to a boil, then reduce heat.
Cover and simmer 30 to 40 minutes.
Stir in cloves and orange segments and garnish with mint.
