Orange Spiced Rice Recipe

Ingredients

 1 tablespoon acceptable margarine
 Onion1 Large, minced
 Celery stalks2 , minced
 Brown rice2 Cup (16 tbs), uncooked
 Water3 Cup (16 tbs)
 2 cups homemade Chicken Broth or commercial low-sodium variety
 Golden Raisins2/3 Cup (16 tbs)
 Peel of 1 orange, chopped
 Ground cloves1/8 Teaspoon
 2 oranges, peeled and cut into small segments
 Fresh mint sprig

Directions

In a large saucepan over medium-high heat, melt margarine.
Add onion and celery and saute 3 minutes.
Add rice and saute 2 additional minutes.
Add water, broth, raisins and orange peel.
Bring to a boil, then reduce heat.
Cover and simmer 30 to 40 minutes.
Stir in cloves and orange segments and garnish with mint.
