1 pound orange roughy
1 small onion, cut into thin slices
2 medium red bell peppers, cut into strips
1 teaspoon dried thyme leaves
Directions
Cut fillets into 4 serving pieces.
Spray heated skillet with nonstick cooking spray.
Layer onion and pepper in skillet.
Sprinkle with 1/2 teaspoon thyme.
Place fish over onion/pepper layer.
Sprinkle with remaining thyme.
Cover and cook over low heat 15 minutes.
Uncover and cook until fish flakes easily with fork (about 10 minutes).
