Italian Style Orange Roughy Recipe
Ingredients
| 1 1/2 pounds orange roughy fillets | ||
| 2 tablespoons bottled Italian salad dressing | ||
| Butter/Margarine | 2 Tablespoon | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Celery | 1/4 Cup (16 tbs), sliced | |
| 1/4 cup each green and red bell pepper strips | ||
| Garlic | 1 Teaspoon, minced | |
| Parsley | 1/4 Cup (16 tbs), chopped | |
| Italian herb seasoning | 1/2 Teaspoon | |
| 1 cup Rice CHEX® brand cereal, crushed to 2/3 cup | ||
| 1 cup Corn CHEX® brand cereal, crushed to 2/3 cup | ||
Directions
Preheat broiler.
Arrange fillets on greased broiler pan; drizzle with dressing.
Broil 4 to 5 inches from heat source for 5 to 7 minutes or until fish flakes easily with fork.
In large skillet over medium heat, melt margarine; add onion, celery, green and red peppers and garlic.
Cook and stir 2 minutes or until crisp-tender.
Stir in parsley, herb seasoning and cereal.
Spoon over fillets.
Broil 1 to 2 minutes more or until topping is golden brown.
