Italian Style Orange Roughy Recipe

 1 1/2 pounds orange roughy fillets
 2 tablespoons bottled Italian salad dressing
 Butter/Margarine2 Tablespoon
 Onion1/4 Cup (16 tbs), chopped
 Celery1/4 Cup (16 tbs), sliced
 1/4 cup each green and red bell pepper strips
 Garlic1 Teaspoon, minced
 Parsley1/4 Cup (16 tbs), chopped
 Italian herb seasoning1/2 Teaspoon
 1 cup Rice CHEX® brand cereal, crushed to 2/3 cup
 1 cup Corn CHEX® brand cereal, crushed to 2/3 cup

Directions

Preheat broiler.
Arrange fillets on greased broiler pan; drizzle with dressing.
Broil 4 to 5 inches from heat source for 5 to 7 minutes or until fish flakes easily with fork.
In large skillet over medium heat, melt margarine; add onion, celery, green and red peppers and garlic.
Cook and stir 2 minutes or until crisp-tender.
Stir in parsley, herb seasoning and cereal.
Spoon over fillets.
Broil 1 to 2 minutes more or until topping is golden brown.
