Orange Roughy Apple Veronique Recipe
Ingredients
4 orange roughy fillets
2 tablespoons water
1/2 cup apple juice
2 tablespoons dry white wine
1 1/2 teaspoons cornstarch
1/4 teaspoon dried rosemary leaves, crushed
1/2 cup thinly sliced red apples
1/2 cup seedless green grapes
Parsley sprig for garnish (optional)
Directions
To Microwave: Place fish in 8-inch square microwave-safe dish.
Sprinkle with water.
Cover with clear plastic wrap; vent by leaving small corner area unsealed.
Microwave on HIGH (100% power) 5 to 7 minutes or until fish flakes easily with fork, rotating dish a quarter-turn twice.
Combine apple juice, wine, cornstarch and rosemary in 2-cup microwave-safe measuring cup.
Let stand 5 minutes.
Microwave, uncovered, on HIGH 1 to 2 minutes or until boiling.
Microwave, uncovered, on MEDIUM (50% power) 3 minutes more, stirring twice.
Spoon apple slices and grapes on top of fillets.
Pour sauce over fish.
