Ingredients
2 eight-inch sponge cake layers
3 eggs, separated
1/2 cup sugar
1 tablespoon cornstarch
Dash of salt
1 cup orange juice
5 teaspoons lemon juice
1 cup whipping cream
Preserved orange slices or fresh orange sections for garnish
Directions
Slice each cake layer in half horizontally, making 4 layers in all.
Beat egg whites until stiff, but not dry.
In the top part of the double boiler, mix together the sugar, cornstarch, and salt; stir in orange juice, lemon juice, and slightly beaten egg yolks.
Cook over hot water, stirring constantly, until thickened; remove sauce from heat.
Fold beaten egg whites into the orange sauce while it is still hot.
Spread hot filling between the cake layers (use a spatula to spread excess filling onto sides of cake until all has been absorbed into the cake).
If layers slip while filling, hold in place with skewers.
