Orange Pork Steaks Recipe
Ingredients
| 6 blade or arm bone pork steaks | ||
| 4 medium sweet potatoes, peeled and cut in 1/2-inch-thick slices | ||
| Oranges | 2 Medium | |
| Brown sugar | 1/2 Cup (16 tbs) | |
| Dash ground cinnamon | ||
| Dash ground nutmeg | ||
Directions
Trim excess fat from steaks.
In skillet cook trimmings till 1 tablespoon fat accumulates; discard trimmings.
Cook steaks slowly just till browned; sprinkle with salt.
In a 13 1/2 X - 8 3/4 x 1 3/4-inch baking dish arrange sweet potatoes.
Slice one of the oranges thinly; place atop potatoes.
Cover with steaks.
Squeeze remaining orange; add water to juice to measure 1/2 cup.
Combine orange juice, brown sugar, 1/8 teaspoon salt, and spices.
Pour over steaks.
Bake, covered, at 350° for 45 minutes.
Uncover; bake 30 minutes more.
Garnish with parsley, if desired.
