Orange Pork Chops Recipe
Ingredients
| 6 pork rib chops | ||
| Grated rind of 1 orange | ||
| Flour | 2 Teaspoon | |
| Orange juice | 1/2 Cup (16 tbs) | |
| Dry sherry | 1 Tablespoon | |
| Brown sugar | 2 Teaspoon | |
| Slivers of orange peel, blanched | ||
| Parsley | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. Rub the grated orange rind into the chops and allow to stand for 15 minutes.
2. Grease and heat a frying pan and cook the chops over a moderate heat until well cooked. When cooked place aside and season with salt and pepper.
3. Drain off all but 2 teaspoons fat from the pan and stir in the flour and cook for a minute. Remove from the heat and stir in the orange juice, sherry and sugar. Return to heat and stir until the sauce is thick. Pour the sauce over the chops and sprinkle with slivers of orange peel and a sprinkle of parsley.
