Orange Pineapple Fluff Recipe
Ingredients
2 cups orange juice
1 envelope unflavored gelatin
1/2 cup canned unsweetened crushed pineapple, well drained
1/2 teaspoon orange rind
1 orange, peeled, seeded, and separated into sections fresh mint sprigs (optional)
Directions
Pour orange juice into a small saucepan.
Add gelatin, and stir mixture over low heat until gelatin is completely dissolved.
Turn into a small bowl, and chill until set.
Spoon gelatin into a medium-size bowl, and beat with a hand-held electric mixer or egg beater until light and fluffy.
Fold in pineapple and orange rind.
Spoon into stemmed sherbet glasses and chill.
