Orange Oat Bars Recipe

Ingredients

 
1 cup quick-cooking oatmeal
 
1 cup orange juice
 
2 cup uncooked oat bran
 
2/3 cup all-purpose flour
 
1/2 cup nonfat dry milk
 
2 tsp baking powder
 
1/2 tsp baking soda
 
Dash salt
 
1/3 cup granulated sugar replacement
 
1/3 cup granulated fructose
 
1/4 cup vegetable oil
 
2 eggs
 
2 tsp vanilla extract

Directions

Soak oatmeal in orange juice in a large bowl for at least 15 minutes.
Combine oat bran, flour, dry milk, baking powder, baking soda, and salt in a large mixing bowl.
Stir sugar replacement, fructose, oil, eggs, and vanilla into the soaked oatmeal.
Then stir oat bran-flour mixture into the oatmeal mixture.
Turn into a greased 13 x 9 in. (33 x 23 cm) baking pan.
Bake at 425°F (220°C) for 25 to 35 minutes, or until a toothpick inserted in middle comes out clean.
Cool.
Cut into 54 bars.
