Directions
2. Add the grated rind of the orange and the honey. Cook over boiling water, stirring occasionally, until the millet is tender and has absorbed about three quarters of the liquid, about 45 minutes.
3. Beat the egg yolks lightly, stir into the millet mixture, and cook, stirring, until the mixture thickens slightly. Cool to room temperature. Chill.
4. Beat the egg whites until stiff but not dry and fold into the dessert. Fold in the almonds. Section the orange and use as a garnish.
