Ingredients
4 egg whites
Pinch of salt
4 tablespoons sugar
4 tablespoons orange marmalade
Butter
Chopped toasted almonds
2 egg yolks
Pinch of salt
1/2 cup sugar
1 cup (1/2 pint) whipping cream
Brandy or Cointreau (optional)
Directions
Beat egg whites with salt until stiff; fold in the 4 tablespoons sugar and orange marmalade.
Butter generously the top half of a 1 1/2 quart double boiler and sprinkle with plenty of chopped toasted almonds.
Carefully spoon in egg white mixture.
Sprinkle more chopped almonds over the top.
Cover and steam for 1 to 1 1/2 hours.
Turn out on serving dish and serve with the sauce made by beating the egg yolks with the salt and 1/2 cup sugar and folding in the whipping cream that has been beaten until stiff.
The sauce may be flavored with brandy or Cointreau to taste.
