 Orange peel2 Tablespoon, grated
 Cake flour1 1/3 Cup (16 tbs)
 Baking powder1/2 Teaspoon
 Salt1/4 Teaspoon
 Butter1/2 Cup (16 tbs), cooled
 Confectioners' sugar

Directions

Preheat oven to 350° F.
Butter and flour madeleine pan (available in gourmet shops).
Beat eggs, orange juice, and sugar in a large mixing bowl.
Continue beating until light and fluffy.
Mix in orange peel.
Sift together flour, baking powder, and salt.
Stir in butter.
Fill molds half-full with batter.
Bake 12 minutes.
Unmold cookies onto a serving plate.
Refill mold and repeat until all batter is used.
Sprinkle madeleines with confectioners' sugar.
