Orange Ginger Beets Recipe
Ingredients
1 pound fresh beets
1/2 teaspoon grated orange rind
3/4, cup orange juice
2 teaspoons cornstarch
2 teaspoons sugar
1/2 teaspoon ground ginger
1/8 teaspoon salt
1 tablespoon butter or margarine
Directions
Leave root and 1 inch of stem on beets; scrub with a vegetable brush.
Place beets in a saucepan; add water to cover.
Bring to a boil; cover, reduce heat, and simmer 35 to 40 minutes or until tender.
Drain; pour cold water over beets, and drain.
Trim off roots and stems, and rub off skins; cut beets into julienne strips, and set aside.
Combine orange rind, orange juice, cornstarch, sugar, ginger, and salt in a small bowl, stirring well.
Melt butter in a medium skillet; add beets and orange juice mixture.
Place over medium heat; bring to a boil, and cook 1 minute, stirring constantly.
