Orange Date Bread Pudding Recipe
Ingredients
| Milk | 4 Cup (16 tbs) | |
| 3 cups soft bread cubes | ||
| Butter/Margarine | 2 Tablespoon | |
| Sugar | 1 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Pitted dates | 1 Cup (16 tbs), chopped | |
| Grated rind and juice of 1 orange and 1 lemon | ||
| Whole eggs | 2 | |
| Eggs | 4 , separated | |
| Orange marmalade | ||
Directions
Scald milk and pour over bread cubes.
Add butter, 3/4 cup sugar, salt, dates, grated rinds and juices, beaten whole eggs and egg yolks.
Mix well and pour into greased 2-quart casserole and bake in preheated moderate oven (350°F.) for 1 1/4 hours, or until set.
Spread top with thin layer of marmalade.
Beat egg whites until foamy; gradually add remaining 1/4 cup sugar and beat until stiff.
Pile lightly on pudding.
With pudding still in pan of hot water, bake in preheated hot oven (400°F.) for 5 minutes.
