Directions

Squeeze the juice from the oranges and heat the juice.
Remove from the gas and cool. (If fresh juice is not available, use an unsweetened juice, like Tropicana, from a tetra pak not a tin) Whisk the egg yolks together with the sugar and cornstarch and gradually stir the mixture into the warm orange juice.
Put it back on the heat and over a very low temperature, stir until the custard thickens.
Then take off the heat and allow to cool.
Mix the gelatin with water.
Warm and stir into the orange mixture.
Add the orange marmalade.
Whisk the egg whites until stiff and fold into the custard.
Allow to cool.
