Ingredients

 Unflavored gelatin- 1 envelope, unflavored
 Cold water1/4 Cup (16 tbs)
 Orange rind1/2 Teaspoon, grated
 Orange juice3/4 Cup (16 tbs)
 Lemon juice2 Tablespoon
 Sugar3 Tablespoon
 Egg white1
 Whipping cream1 Cup (16 tbs)
 Orange1
 Mint leaves- as required

Directions

MAKING
1)Use cold water to soften gelatin, setting it aside.
2)Use a sauce pan and mix orange rind, orange juice, lemon juice, and 3 tablespoons sugar and let it boil.
3)Remove the mixture from heat, and stir in softened gelatin.
4)Chill mixture until consistency of unbeaten egg white is reached.
5)Egg should be at room temperature, beat egg white until foamy.
6)Gradually add 3 tablespoons sugar, 1 tablespoon at a time, beating until stiff peaks form.
FINALIZING
7)Fold egg white and whipped cream into juice mixture, blending it well.
8)Apply oil on four cups mold.
9)Pour the mixture into the mold and chill it.
SERVING
10)Before serving unmold and garnish with orange sections and mint.
