 Softened butter1/4 Cup (16 tbs)
 Sugar1/3 Cup (16 tbs)
 Eggs2 , beaten
 Orange rind1 Tablespoon, grated
 Orange juice2/3 Cup (16 tbs)
 All-purpose flour - 2 cups
 Salt1 Teaspoon
 Baking powder1 Tablespoon
 Cranberry sauce11/2 Cup (16 tbs)

Directions

GETTING READY
1) Preheat the oven to 400°F.

MAKING
2) Mix together the butter and sugar until creamy.
3) Add orange rind and eggs and beat well.
4) Sift together the flour with baking powder and salt.
5) Add with orange juice to the creamed mixture.
6) Fill greased muffin tins 1/3 full; add a teaspoon of cranberry sauce to each.
7) Add remaining batter to fill each muffin tin 2/3 full.
8) Bake in a 400°F oven for approximately 25 minutes.

SERVING
9) Serve hot with a drop of cranberry sauce as topping.
