Easy Orange Cheesecake Recipe
Ingredients
25g (1 oz) butter
50 g (2 oz) digestive biscuits, crushed filling:
113 g (4 oz) curd cheese
25 g (1 oz) caster
Sugar grated rind and juice of 1/2 orange
114 ml (4 fl oz) double cream, whipped
Mandarin oranges to decorate
Directions
Melt the butter and stir in the crushed biscuits.
Press the mixture onto the base and sides of a 15 cm (6 inch) flan dish.
Leave in the refrigerator until firm.
Mix the curd cheese with the sugar, orange rind and juice.
Fold in two-thirds of the cream.
Spoon the mixture into the biscuit flan case.
Decorate with the remaining cream and mandarin oranges.
