Orange Cheddar Cheesecake Recipe
Ingredients
| 1 cup crushed orange-flavored cookie wafers | ||
| Melted butter | 2 Tablespoon | |
| Cream cheese | 2 Large, softened | |
| 1/2 cup finely shredded Cheddar cheese | ||
| Sugar | 3/4 Cup (16 tbs) | |
| Flour | 2 Tablespoon | |
| Eggs | 3 | |
| Beer | 1/4 Cup (16 tbs) | |
| Whipping cream | 1/4 Cup (16 tbs) | |
| 1/4 teaspoon each grated orange peel and grated lemon peel | ||
| Vanilla | 1/2 Teaspoon | |
Directions
Mix the cooky crumbs with the melted butter and pat into the bottom of a buttered 9-inch cheesecake pan (one with removable bottom or spring-release sides).
Bake in a 350° oven for 8 minutes.
Whip the cream cheese until light and fluffy and blend in the Cheddar cheese.
Gradually beat in the 3/4 cup sugar mixed with the flour.
Add eggs, one at a time, beating until smooth.
Mix in the beer and cream.
Add the grated orange and lemon peels and vanilla, mixing well.
Turn into crumb-lined pan; bake in a 350° oven for 30 minutes.
Cool, then chill.
