Orange Carrot Muffins Recipe

Ingredients
1 cup flour
1/2 cup raisins
1/4 cup wheat bran
1/4 cup brown sugar
1/2 tsp baking powder
Pinch of salt
1 egg
1/3 cup oil
1/4 cup margarine, melted
1/4 cup molasses
2 tbsp orange juice
2 tsp orange peel
1 cup carrots, grated
Pecan Topping
3 tbsp pecans, chopped
3 tbsp brown sugar
1/4 tsp cinnamon
Directions
Butter or line a microwave safe muffin pan with doubled paper cups.
Set aside.
In a large bowl, mix dry ingredients.
In a second bowl, beat egg, oil, margarine, molasses and orange juice.
Fold in orange peel and carrots.
Mix into dry ingredients.
Fill cups to two thirds.
Set aside.
In a bowl, mix topping ingredients.
Divide among muffins.
In microwave oven, bake 6 muffins at a time, 2 minutes on HIGH.
Half rotate pan after 1 minute.
Let stand 5 minutes before serving.
Set aside.
