2 1/2 to 3 lb. frying chicken, cut up
1/2 cup orange marmalade
1/2 cup orange juice
1/2 cup dry red wine
2 tablespoons cornstarch
2 tablespoons packed brown sugar
1 tablespoon lemon juice
1 teaspoon salt
Directions
1. Arrange chicken pieces, skin side down and thick edges toward outside, in 2-quart (12x7) glass baking dish. Combine remaining ingredients in medium mixing bowl; pour over chicken. Cover with plastic wrap.
2. Microwave on HIGH for 20 minutes. Turn chicken over and continue cooking on HIGH for 5 to 6 minutes or until chicken is fork tender. Let stand 5 minutes before serving.
