Homemade Orange Bread Recipe
Ingredients
3 large orange rinds, chopped
1 teaspoon soda
2 cups water
1 1/2 cups sugar
1/3 cup shortening
2 eggs, beaten
1 cup milk
3 1/2 cups flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup pecans
Directions
Put soda and 1 cup of water over orange rinds.
Cook over high or medium heat until mixture comes to a boil, approximately 5 minutes.
Pour off liquid.
Add 1 cup of sugar and remaining water.
Cook, do not boil, to a texture resembling preserves.
Cream shortening and remaining sugar.
Combine eggs and milk; blend with shortening and sugar mixture.
Sift together flour, baking powder and salt, and add pecans.
Combine dry ingredients with the creamed mixture, and blend in rind mixture carefully.
Grease and flour a large tube pan, and fill with batter.
Cook at 350° for approximately 35-45 minutes.
