Orange Apricot Ring Recipe

Orange apricot ring is a lovely fruit ring made with orange gelatin with lemon-lime beverage to taste. The orange apricot ring is sweet with a hint of tang to it. chilled and served, this is a perfect summer dessert.

Ingredients

 
2 16 ounce cans apricot halves
 
2 3-ounce packages orange-flavored gelatin
 
1 6-ounce can frozen orange juice concentrate
 
2 tablespoons lemon juice
 
1 7-ounce bottle lemon-lime carbonated beverage, chilled

Directions

Drain apricots, reserving 1 1/2 cups syrup.
Puree apricots in sieve or blender.
Heat reserved syrup to boiling; dissolve gelatin and dash salt in syrup.
Add puree, juice concentrate, and lemon juice; stir till concentrate is melted.
Slowly pour carbonated beverage down side of pan; mix gently.
Pour gelatin mixture into 6 1/2 cup ring mold.
Chill till firm.
