2 Finely grate the rind from the fruit and put it into a 2.25 litre/4 pint (10 cup) mixing bowl.
3 Halve the fruits, and squeeze and strain juice into the bowl.
4 Add the butter and the sugar.
5 Microwave on power 6 for 7-8 minutes, stirring twice during cooking. Stir to ensure sugar has dissolved.
6 Strain the eggs into the bowl and beat well with a wooden spoon.
7 Return the bowl to the microwave oven and heat on power 5 for about 15 minutes, stirring every 2 minutes during cooking, until the mixture coats the back of the spoon.
8 Put in sterilized jars and seal.
