Orange Almond Rice Recipe
Ingredients
| Salt | 2 1/2 Cup (16 tbs) | |
| 1 1/2 Cups unsweetened orange juice | ||
| Salt | 1/4 Teaspoon | |
| Wild rice | 3/4 Cup (16 tbs), uncooked | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| 1 Cup long-grain rice, uncooked | ||
| 1/3 Cup canned mandarin oranges in light syrup, drained | ||
| Sliced almonds | 1/4 Cup (16 tbs), toasted | |
| Parsley | 2 Tablespoon, chopped | |
| Pepper | 1/4 Teaspoon | |
Directions
Combine chicken broth, unsweetened orange juice, and salt in a medium saucepan; bring mixture to a boil.
Add wild rice and chopped onion to mixture in saucepan; cover, reduce heat, and simmer 20 minutes.
Add long-grain rice; cover and simmer an additional 30 minutes or until rice is tender and liquid is absorbed.
Add oranges, almonds, parsley, and pepper to rice mixture in saucepan; stir well.
Add wild rice and chopped onion to mixture in saucepan; cover, reduce heat, and simmer 20 minutes.
Add long-grain rice; cover and simmer an additional 30 minutes or until rice is tender and liquid is absorbed.
Add oranges, almonds, parsley, and pepper to rice mixture in saucepan; stir well.
