Orange Almond Cookies Recipe

Ingredients

 
1 cup plus 2 tablespoons (250 g) butter or margarine
 
1 cup plus 2 tablespoons (250 g) firmly packed soft brown sugar
 
2 eggs
 
Generous 2 cups (325 g) all-purpose flour
 
1 teaspoon baking powder
 
1/2 teaspoon salt
 
Grated peel of 1 large or 2 small oranges
 
3/4 cup (75 g) chopped almonds

Directions

Cream butter or margarine and sugar in a large bowl until light and fluffy.
Beat in eggs one at a time.
Sift flour and baking powder with salt; stir a spoonful at a time into creamed mixture.
Add orange peel and almonds; mix thoroughly to make a dough.
Shape dough into a roll 2-1/2 inches (6 cm) wide at each end.
Wrap in foil or plastic wrap.
Refrigerate overnight.
Preheat oven to 400°F (205°C).
Grease baking sheets.
Cut thin slices from roll of cookie dough; place slices on greased baking sheets.
Bake 8 to 10 minutes or until light brown around the edges.
Cool cookies slightly on sheets then transfer to racks to cool completely.
