Directions

GETTING READY:
1. Preheat oven to 350 degrees Fahrenheit.

MAKING
For the Oprah Fish:
2. Dust both sides of the fish fillet with pepper and salt.
3. Next, dip the seasoned fish into a bowl of milk.
4. Next, coat with flour.
5. Grill the fish on both sides for 5 minutes.
6. Next, pop the fish into the oven for 4-5 minutes.

For the Diablo Sauce:
7. In a pan, add butter, and brown the shallots.
8. Add 1 cups of white wine.
9. Next, add the curry powder, dried mustard, nutmeg, pepper and cayenne pepper and stir and reduce.
10. Next, add half and half milk and Worcestershire sauce and continue to reduce until thick.

For the Belgium Style Berry Pie:
11. Preheat oven to 275 Degrees Fahrenheit
12. Add flour to the table and place puff pastry sheet, coat with flour and roll it out.
13. Cut out into pie shape and punch holes into the puff pastry with a fork.
14. Add the Pate a choux to the middle of the pastry and spread evenly.
15. In a bowl, add egg white to almonds and sugar and mix together.
16. Top this almond mix on top of the pate a choux and spread.
17. Pop into the oven for 30-40 minutes.
18. After 40 minutes, remove from oven and slice the top almond layer off.
19. Add whipped cream and berries and spread.
20. Place almond top back on and your Belgium style berry pie is ready.

SERVING
21. Plate the Oprah fish and top with Diablo sauce and serve with a portion of grilled vegetables.
22. Cut a slice of the Belgium Style Berry Pie, plate and serve.
