1/3 cup grated carrot
 
1/3 cup grated apple
 
3 tablespoons finely chopped pecans, toasted
 
1/2 teaspoon vanilla extract
 
Curly leaf lettuce leaves (optional)
 
4 whole wheat English muffins, split
 
Red apple slices (optional)

Directions

Place pineapple on paper towels, drain well, pressing out excess juice.
Beat Neufchatel cheese until fluffy; fold in well-drained pineapple, carrot, apple, pecans, and vanilla.
Place curly leaf lettuce leaves on English muffin halves, if desired.
Spread fruit-cheese mixture evenly over lettuce leaves.
Top with red apple slices, if desired.
