Open Face Shrimp Melt Recipe
Ingredients
| 3 ounces shelled and deveined cooked small shrimp, cut lengthwise into halves | ||
| Celery | 1/4 Cup (16 tbs), finley chopped | |
| Green onion | 2 Tablespoon, chopped | |
| 1 tablespoon plus 1 teaspoon reduced-calorie mayonnaise | ||
| Dry sherry | 1 Tablespoon | |
| Lemon juice | 2 Teaspoon | |
| 1 teaspoon Dijon-style mustard | ||
| Wheat bread slice | 2 , toasted | |
| 4 thin tomato slices | ||
| Monterey jack cheese slice | 2 | |
Directions
1. Preheat broiler, in small mixing bowl combine all ingredients except bread, tomato slices, and cheese; mix well.
2. Onto each slice of bread arrange 2 tomato slices and half of the shrimp mixture, then top with 1 cheese slice.
3. On nonstick baking sheet arrange sandwiches and broil 5 to 6 inches from heat source until cheese melts, about 1 minute.
