Ingredients

 
1/4 cup (60 mL) butter
 
4 cups (1 L) onions, thinly sliced
 
2 eggs, beaten
 
1 cup (250 mL) sour cream
 
Salt and pepper to taste
 
2/3 cup (160 mL) Parmesan cheese, grated

Directions

Place the butter in a 9-inch (23 cm) Corning pie plate and melt 3 minutes at HIGH The butter should be light brown here and there.
Add the onions, stir well.
Microwave, uncovered, 5 minutes at HIGH, stirring once during the cooking period.
Beat together the eggs, sour cream, salt and pepper.
Add to the onions.
Stir until well blended.
Adjust seasoning.
Top with the grated cheese.
Microwave at MEDIUM 5 minutes.
To bake in the convection part of your microwave, preheat the oven to 425°F (215°C), set the plate on the oven rack and bake 20 minutes.
