Ingredients

 
4 large yellow onions, peeled and cut in half
 
4 tbsp (60 mL) butter
 
The sauce:
 
2 tbsp (30 mL) butter
 
2 tbsp (30 mL) flour
 
1 cup (250 mL) milk
 
1/2 cup (125 mL) Cheddar cheese, grated
 
2 tbsp (30 mL) vermouth or Madeira wine
 
Salt and pepper to taste
 
1/4 to 1/2 cup (60 to 125 mL) almonds, slivered

Directions

Place onions in a 4-cup(l L) microwave-safe dish with the 4 tablespoons (60 mL) butter.
Cover and microwave at HIGH 6 to 8 minutes, stirring once.
Place the 2 tablespoons (30 mL) butter in a microwave-safe bowl.
Melt 1 minute at HIGH.
Add the flour, mix well.
Add the milk, stir.
Microwave at MEDIUM-HIGH 3 to 4 minutes, or until creamy, stirring once.
Add to the sauce the cheese, vermouth or Madeira wine.
Salt and pepper to taste.
Microwave 3 minutes at HIGH, stirring twice.
Pour creamy sauce over the onions; do not mix.
Place the almonds in a microwave-safe dish.
Brown in the microwave at HIGH 3 to 4 minutes, stirring twice.
Pour the browned almonds over the sauce.
Microwave 3 to 4 minutes at MEDIUM-HIGH when ready to serve.
