Ingredients
6 large Spanish or Bermuda onions
2 tablespoons butter
1 cup (packed) coarse dry bread crumbs or cooked rice
1 1/4 cups coarsely chopped Brazil nuts
1 egg, lightly beaten
1/4 teaspoon thyme
Salt and freshly ground black pepper to taste
Buttered crumbs
Directions
1. Peel the onions without cutting off root ends, so onions will remain whole. Cut a thick slice from the top of each. Boil the onions and the top slices in a large quantity of salted water until just tender, about thirty minutes. Drain and cool. Scoop out the centers to form cups, leaving one-third- to one-half-inch walls. Save the centers and invert the cups to drain.
2. Preheat Oven to moderate (375° F.).
3. Chop the top slices and onion centers. In a skillet heat the butter, add the chopped onion and cook until most of the liquid that forms in the skillet evaporates. Add the remaining ingredients except the buttered crumbs and mix well.
4. Stuff the onions with the mixture and top with the buttered crumbs. Place in a pan and add water barely to cover the bottom. Bake until the crumbs have browned, about twenty to thirty minutes.
