Ingredients

| Bacon strip | 2 | |
| Liver | 1/2 pound | |
| Salt | 1/4 Teaspoon | |
| Ground black pepper | 1/8 Teaspoon | |
| 1/2 cup soft bread crumbs, cooked rice or mashed potatoes | ||
| Cheese | 2 Tablespoon, grated | |
Directions
1. Prepare the onions for stuffing Preheat oven to moderate (375° F.).
2. Fry the bacon in a skillet until crisp. Remove the bacon and crush. Reserve.
3. Skin the liver and remove any veins. Fry in the bacon fat until almost no juice flows when the liver is pierced with a fork. Grind the liver with the reserved centers of the onions. Add the salt, pepper, bacon and bread crumbs and mix.
4. Stuff the onion shells with the mixture and sprinkle with the cheese. Place in a pan and add water barely to cover the bottom. Bake until the tops have browned, about twenty-five minutes.
