Ingredients
3 fl. oz. olive oil
1 lb. pickling onions, peeled and blanched for 5 minutes
2 fl. oz. malt vinegar
2 tablespoons soft brown sugar
3 oz. walnuts, chopped
3 oz. raisins
Directions
In a medium sized saucepan, heat the oil over moderate heat.
When the oil is hot, add the onions and cook, stirring occasionally, for 8 to 10 minutes, or until they are lightly browned.
With a slotted spoon, transfer the onions to a plate.
Add the vinegar and sugar to the pan and cook, stirring frequently, for 5 minutes, or until the sugar has dissolved and the mixture is hot.
Return the onions to the pan and cook for 3 minutes, basting frequently.
Stir in the walnuts and raisins, if you are using them, and cook for 2 minutes.
Remove the pan from the heat and transfer the onion mixture to a warmed serving dish.
