Onion Sorrel And Cheese Tart Recipe Video

A twist on the classic onion and gruyere french tart, you can also use red onions for a more rustic version of this dish

Ingredients

 
2 large sweet onions (such as maui or vidalla)
 
4 Tbs butter
 
4-8 oz sorrel
 
2 oz gruyere cheese, shrdded
 
2 eggs
 
1 cup heavy cream
 
1 partially prebaked tart shell
 
pepper to taste

Directions

Thinly slice onions into half moons, melt 4 tbs unsalted butter in a large cast ron pan and cook onions over med heat for 10 mins or until softened. You can use them like this, and your tart will have a pronounced onion flavor or
you can continue cooking them over low heat for about another hour until they camelize (turn golden and reduce) stir them occasionally, this will give the tart a sweeter flavor. Let onions cool. Cut stems off sorrel and coarsly chop leaves. Saute leaves in 1 Tbs melted butter until they turn a grayish green and reduce greatly, about 3 mins.
Combine eggs and cream in a large bowl, add 1 oz of the cheese, the sorrel and the onions. Season with freshly
ground black pepper. Sprinkle the remaining cheese over the bottom of the tart shell and pour filling in. Bake at 375 F for 35-45 mins, or until tart is set. Serve warm

Thank you , I must try this recipe. Please let me add this sorrel recipe near your sorrel tart. Slice one onion and 3 cloves garlic. Fry in 3 tablespoon oil. Add one tablespoon paprika and half teaspoon tumeric powder.Add salt or fish salt. Add one 2 tablespoon shrimp powder (comes in a bottle from Thailand ) or can use small fresh shrimp. Add one small can shredded bamboo, add about one pound of sorrel. Salt to taste. Also can add 5 or 6 whole small chille. The taste will be sour and salty taste and good with plain white rice. We cooked this dish with roselle leaves. Now we can buy roselle leaves in Virginia. Please try and let me know if you like it or not.
